HELADO DE AVELLANAS
Ingredientes:

  • 1 vaso o 160 g de avellanas
  • 150 g de azúcar
  • 3 huevos
  • 360 ml de nata

    En una cacerola poner 100 g de azúcar y añadir 4 cucharadas de agua. Poner al fuego, llevar a ebullición, mezclando de vez en cuando, y hervir un par de minutos.
    Quitar del fuego y añadir las avellanas.
    Cuando se caramelicen las avellanas batirlas con una batidora.
    Separar las claras de las yemas. Añadir a las yemas 50 g de azúcar, la nata y montar.
    En la mezcla obtenida añadir las avellanas, mezclar.
    Por separado, montar las claras.
    Añadir las claras a la masa de yemas y avellanas, mezclar bien.
    Poner la masa en un recipiente de plástico, tapar y poner en el congelador una hora.
    Pasada una hora, cuando la masa empiece a helarse, sacarla y removerla con una cuchara (para romper los cristalitos de hielo). Volver a congelar durante un par de horas.
    Sacar el helado 10 minutos antes de servir, ponerlo en las copas para helado y decorar según gusto.
