ESPAGUETI CON SALMÓN A LA SALSA DE LIMÓN
Ingredientes:

  • 300 g de espagueti
  • 300 g de salmón
  • 30-40 g de mantequilla
    • Para la salsa:
  • 4 yemas de huevo
  • 1 limón
  • 110 ml de vino blanco
  • ½ cucharadita de azúcar
  • 50 g de mantequilla
  • sal
  • perejil
    • Elaboración:

    Preparar la salsa. Para ello, rallar la piel del limón (solo la parte amarilla).
    En una cacerola mezclar las yemas con la piel del limón, añadir una cucharada de zumo de limón, 4 cucharadas de vino y azúcar. Sazonar con un poco de sal.
    Poner a fuego lento y sin parar de mover, hervir hasta obtener una masa espesa y homogénea.
    A continuación, añadir el vino restante y la mantequilla troceada. Mezclar bien y una vez la mantequilla esté derretida, quitar del fuego.
    Añadir el perejil, mezclar.
    Hervir los espaguetis al punto en agua salada y escurrirlos.
    Pelar y cortar el salmón en trozos.
    En una sartén derretir la mantequilla y freír el salmón durante 10 minutos.
    Añadir los espaguetis al salmón, mezclar.
    Añadir la salsa, mezclar y cocer 4-5 minutos más.
    Servir.
