ENSALADA TIBIA DE PATATAS Y LENTEJAS
Ingredientes:

  • 120-150 g de lentejas
  • 900 g de patatas nuevas
  • 1 cebolla para ensaladas o 6 cebolletas
  • 3 cucharadas de aceite de oliva
  • 2 cucharadas de vinagre de Módena
  • sal
  • pimienta

    Para esta ensalada van mejor las patatas nuevas, pero con patatas habituales también se puede cocinar.
    Elaboración:

    Preparar las lentejas según instrucciones en el envase. Escurrirlas, pasar bajo el grifo y reservar.
    Cortar la cebolla en rodajitas.
    Hervir las patatas en agua salada durante 15-30 minutos dependiendo de su tamaño, hasta que, al pincharlas con un tenedor, se noten tiernas. Escurrirlas y partirlas por la mitad o en cuartos.
    Mezclar en una ensaladera las lentejas, las patatas, y la cebolla. Aliñar con el aceite y el vinagre, sazonar con pimienta y una pizca de sal, remover bien. Servir enseguida.
