ENSALADA DE PASTA Y ATÚN A LAS HIERBAS
Ingredientes:

  • 200 g espirales
  • 1 pimiento rojo
  • 150 g de espárragos blancos en conserva
  • media cebolla roja
  • 4 tomates
  • 200 g de atún
    • Para la salsa:
  • 6 cucharadas de aceite de oliva virgen extra
  • 3 cucharadas de vinagre blanco
  • 1 cucharada de zumo de lima o limón
  • 1 cucharadita de mostaza
  • 1 cucharadita de miel
  • 3-4 cucharadas de albahaca picada
    • Elaboración:

    Hervir la pasta en agua salada. Escurrirla y dejarla enfriar.
    Asar el pimiento en el horno con el ventilador de 12-15 minutos, hasta que la piel empiece a chamuscarse. Meterlo en una bolsa de plástico, cerrarlo bien y dejar enfriar. Pelarlo y cortarlo en tiras.
    Cortar los espárragos en tiras.
    Cortar los tomates en rodajas.
    Cortar la cebolla en rodajas..
    Para preparar el aliño, mezclar bien todos los ingredientes.
    En un bol mezclar la pasta, el pimiento, los espárragos, la cebolla, los tomates y el atún escurrido y desmenuzado. Incorporar la salsa y remover.
    Repartir la ensalada en los platos y servir.
